BACKGROUND OF THE INVENTION

DESCRIPTION OF THE INVENTION
The system for the elaboration of lactic curds object of the present invention is constituted by a series of machines and devices to carry out the necessary procedure for the elaboration of the curd or the curl. The first of the machines is the press, followed by the
mixer-homogenizer and finally the compactor. These
machines accompany other products to facilitate the task to
perform they are: cloth separation combs, filling pipes
cloths, cooling carts, emptying table, transport carts and drawers. The procedure for carrying out the operation of said system and
consequent elaboration of the lactic curd, is developed in the
following stages: a) Pressing. To press the lactic curd, which is the first stage of the procedure, the press has cloths that hang from bars that in turn slide along the racks of said machine. Said cloths, previously separated by the combs, are filled with curd through the filling tubes. The pressing itself is produced through two stainless steel gates located diametrically on opposite sides of the press that are pushed towards the center of the press through pushcarts by four pneumatic cylinders that press the cloths, extracting the serum of the curd. These steel gates are automatically lifted upwards by means of a lifting system to be able to place the cloths in the press and once placed they return to their place to begin pressing. Intercalated between the cloths are some separating plates in order that the pressing is homogeneous. c) Transportation. To continue the process, the curd is emptied from the cloths to transport carts that take the product to the next stages of the procedure. The emptying of the cloths is carried out on an emptying table equipped with a hopper-like holes, under which the transport carts are placed, the lactic curd falling on them.
d) Homogenization. In said transport carts the lactic curd is driven to the mixing-homogenizing machine which contains a car-elevator-turner, where they enter to empty said curd into the mixing and homogenization cavity. The purpose of this machine is to mix and homogenize the curd to adapt it to one or the other of the following subsequent processes: Rolling or Bag Filling.
to. Roller. At this stage of the process, by means of an extruder coupled to the above-mentioned mixer-homogenizer, the product is extruded and by means of a cutting system and conveyor belt a roller is ready to mature.

The procedure to carry out the operation of said system and consequent elaboration of the lactic curd, is developed in the following stages:
f) Pressing. To press the lactic curd, which is the first stage of the procedure, the press has cloths (9) that hang from bars (5) that in turn slide along the racks (6) of said machine. Said cloths (9), previously separated by the combs (12), are filled with curd through the filling tubes (3). The pressing itself is produced through stainless steel gates (2) located diametrically on opposite sides of the press that are pushed towards the center of the press through thrust carriages (1) by four pneumatic cylinders (7 ) that press the cloths (9), removing the whey from the curd. 2. Method for the implementation of the lactic curd making system of the preceding claim, characterized by comprising the following steps:
